Heavenly Butternut Squash Soup


One of my favorite things about autumn is all of the delicious soups, stews, and baked goods infused with my favorite aromatic spices. Below is one of my all-time favorite butternut squash recipes with an essential oil boost!

Heavenly Butternut Squash Soup
-1 large butternut squash
-1 large white onion
-3 or 4 large potatoes
-¼ cup honey or maple syrup
-500 ml cream (can sub coconut or cashew cream if needed)
-6 – 8 cups Chicken stock
-1/2 tsp nutmeg
-1-2 drops Spark Naturals Coriander essential oil (optional)
-1-2 drops Spark Naturals Cinnamon Bark essential oil
-Salt and pepper to taste

Directions:
Peel and cube squash, potatoes and onions. Add in the chicken stock and boil until soft but not mushy. Puree mixture and add remaining ingredients to taste. Garnish with croutons, parsley, or chopped pistachios if desired.
