Toasted Coconut Cilantro-Lime Quinoa

One of the things I love about summer is all of the delicious flavor combinations, especially coconut and lime! When the seasons change, I can't help but giving summer's flavors one last hurrah - and this recipe is definitely on the list.

Toasted Coconut Cilantro-Lime Quinoa is high in protein and healthy fats, which is perfect for fueling an active, healthy lifestyle!

•1/4c unsweetened coconut
•1/2c quinoa, rinsed
•1c water
•2-4T coconut oil/grassfed butter
•juice of 1 lime (can sub SN EO)
•2-4 drops SN Cilantro EO

Lightly toast coconut flakes in a pan and set to the side. Put the quinoa and water in a saucepan and bring to a boil; cover and reduce heat to a simmer. Simmer until tender and most of the water is absorbed, about 15 mins. Fluff with a fork, add coconut oil or grass-fed butter and then all other ingredients. Adjust flavors to taste and serve immediately (so coconut stays crunchy). Yum!
